Creamy, Quick Chocolate Pudding

The kiddos were wanting dessert tonight, so I was looking up some ideas for quick chocolate pudding, since it’s been a while since I made it and not sure I even had my recipe anymore. But came across one with, of all things, butter. And that intrigued me.

2/3 c. sugar
1/4 c. Hershey’s cocoa
3 tbsp. cornstarch (this seemed like a lot to me compared to other recipes, but was perfect)
1/4 tsp. salt
2 1/4 c. milk (use whole for more creaminess)
2 tbsp. butter
1 tsp. vanilla (seemed like a ton, but again, was about perfect)

Combine sugar, cocoa, cornstarch and salt in medium saucepan; gradually stir in milk. Cook over medium heat, stirring constantly, until mixture boils; boil and stir about a minute (it’ll quite suddenly thicken…you’ll know it’s time to pull off heat when it’s a pudding consistency). Remove from heat; blend in butter and vanilla. Pour into individual serving dishes. Carefully press plastic wrap onto surface. Cool…if you can wait.

It’s very rich, very, very creamy. And very, very, very yummy.

The kiddos loved it. Mika gave it an 8 out of 10, Sammy gave it a 9.5.

(And for the record, no, that’s not a pic of my pudding…I’m completely violating some obscure copyright law. But I promise I’ll take it down the second I’m requested to by some large attorney firm).
